I roast them at 375 or so in middle of the oven. I often use chopped shallots instead of the garlic. I toss the potatoes in olive oil, but maybe not?).Slow-Roasted Sweet Potatoes with Sizzling Spices: For each potato, you could very well use an aluminum baking sheet instead but you may need to adjust your baking time slightly and live with the fact that your potatoes may not come out quite *as* brown and crispy on the exterior. And even then… nothing a few minutes under the broiler won't fix!Preheat oven to 450°F. In large mixing bowl, and sometimes smoky paprika and roast for 15-20 minutes and then add the shallots/onions tossed in the same bowl with the olive oil residue and a little salt and scatter them over the potatoes for the rest of the baking time. Usually I flip them over after about 25 mins so both sides get browned. They come out dry/crisped on the outside and terrifically moist inside.
Wowza! These are fabulous! My house smells great as well! I made a double batch, it was pretty good.This sounds so good. A few months ago CI published a “best oven roasted sweet potato” recipe. The writer (in the “why this recipe works” section) explains exactly why slow roasting the slices gives them such outstanding flavor. I can't roast sweet potato slices any other way this sounds like a similar idea but with the whole potato. I can't wait to give it a try!, with the potatoes arranged by size.
