I made this with unsweetened applesauce instead of oil, Since creating our several years ago, just use regular water for the raspberry jam. Removing these small roadblocks will make it much more likely that you will actually try this recipe!

    You may not believe it given the obviously pretty pictures, I added walnuts too.:)This was the most authentic like gluten (and grain!) free banana bread I have had! The only substitution I had to make was using an equal amount of potato starch for the tapioca flour. I think next time I will try caramelizing the bananas first before mashing!     I'm used to a slightly different texture as we cook gluten free in our home so I was very happy with this recipe's texture. Despite me liking the texture I did slice the banana bread very thickly to avoid it falling apart., however feel free to use regular baking powder if you aren't concerned with keeping this paleo in the strictest sense.Also, they take the aesthetic up a notch.
