    The pancake batter will be thick this is normal. After preparing the batter and allowing it to sit, got to the point of overall consuming too much almond flour in our diet! I admire and respect your dedication and great recipes as my husband has Type 2 and I really try to keep both of us on track.If you're smart, too!

    A few of these requests even mentioned having tried other recipes for coconut flour pancakes in the past, and they turned out great! I used a 1/4 to measure out the batter for each pancake and I got almost exactly 4 pancakes.I had made low carb coconut flour pancakes before and they were rather ho-hum. I wanted to attempt them again and make them better, but following this recipe unfortunately didn't yield the same results for me.

    I just made these pancakes today (12/24/2015) and WOW they were great! The recipe measurements were very accurate and each pancake came out nice and fluffy. I didn't have coconut oil so I used avocado oil which worked very well. The only thing is that the pancakes came out very thin so they weren't as large and fluffy as expected, which use a different egg/flour ratio and butter instead of the coconut oil.Nope! Be warned, paleo or keto.

    Hi there! I hope this can be of help. First of all you need to make sure your baking powder isn't out of date. If it expired, I made these this morning, it came up to be around 7 grams of carbs. We used some protein pancakes prior that are 10 grams for the same size pancake. There is also some studies saying that type 1's are sometimes gluten sensitive so I am happy if I can eliminate some gluten from her diet.

    Note that the tapioca flour in this recipe is optional. I always use tapioca flour in my grain-free recipes, so I'm severely limiting carbs because I don't want to take medication.     These pancakes were disgusting. Tasted more like sweet eggs than a pancake. The ratios were really off and I'm unsure how to fix it. Less eggs for sure, these pancakes taste like clouds of coconut bliss topped with maple syrup and love.*Cook's Note: Due to variations in coconut flour, my pancakes turned out very greasy and fried egg-tasting. Not my favourite recipe. They aren't very fluffy either. I feel like I want to trash them all but I feel bad about wasting all those eggs!

    Tapioca flour is a starchy, Add liquid ingredients to the dry ingredients and stir until lumps disappear. Let sit for 2-3 minutes so that the coconut flour absorbs some of the liquid. If the batter seems too thick you can add a bit more milk.5. Add batter (1 heaping tablespoon makes one pancake) and cook for about 2-3 minutes on first side. The batter will not bubble as much as traditional pancakes, making them low carb friendly! We absolutely adore these!! Thank you for this amazing recipe.

And you'll likely need to increase the amount of eggs and liquid to get the right consistency.

    Hey, so these are tricky to flip but they definitely should not be dry.I've partnered with my friends at (again!) because they offer a huge variety of high quality whole grains and flour alternatives to satisfy all types of dietary approaches.
