These are my hubby's breakfast muffins everyday! I make them with soy milk and a tablespoon of lemon juice in place of the buttermilk and I use 2T water, and liquid sweeteners like honey or maple syrup. This grain-free take on coffee cake muffins also features chocolate chips.
