These are my hubby's breakfast muffins everyday! I make them with soy milk and a tablespoon of lemon juice in place of the buttermilk and I use 2T water, and liquid sweeteners like honey or maple syrup. This grain-free take on coffee cake muffins also features chocolate chips. (P.S. You're going to want to eat this basically all the time.)Divide evenly among the prepared muffin pan. Sprinkle with oats and turbinado sugar if using. Bake until the muffins are golden and a toothpick inserted in the center comes out clean, or 1/2 cup of finely chopped apples mixed in.Anyway, and the fact that whole wheat flour is lower in gluten than regular all-purpose flour also means a more tender muffin.
