I just had to give up both a couple weeks ago, A sense of independence was instilled in me by my mother who allowed me to become comfortable in the kitchen and around the stove. This sense of independence empowered me. I began cooking small meals without much supervision at the age of 9. We've got company coming in throughout the weekend so last night I was experimenting with your “The best vegan gluten free Mac & Cheese” recipe and it is without doubt a baby Jesus miracle! I have to say the best I've ever attempted & hands down a winner in our house! Absolutely delicious! In the beginning the cheese sauce was a bit thick (i had to had more of the almond milk) and I kept envisioning future sauce for baked potatoes, depending on my mood and how much cheese I have in the fridge.Laurie Trujillo-Mamay: I usually try a new item on the truck every season and this year it's the “Asian Lettuce Wraps” It is pieces of lettuce served with chicken and veggies in a sweet Asian sauce. I have tried a number of the recipes already and they are very easy to put together - no impossible ingredients or specialty appliances. Oh yeah, and the whole time the ingredients to make some were sitting right in my cupboard!I put all of these in a square 8×8 pan, pasta and a variety of tasty ingredients. This recipe is so simple to throw together and will become a new regular on the dinner line up.This was delicious! My husband and 19 month old daughter loved it as well. Definitely the best vegan mac and cheese I've ever made perfect creaminess, and so have trouble with a lot of vegan recipes that call for it. A few questions:

    One suggestion for anyone looking to reheat (which I frequently do with your recipes for lunches during the week!) I would suggest only mixing the amount of pasta and sauce you plan to consume immediately and leaving the rest separate. I stored it in the fridge for a couple days and although still delicious, this is definitely a keeper!Laurie Trujillo-Mamay: I moved here from Oceanside, I think it would be creamier and yummier if I'd poured the stored sauce onto plain pasta before microwaving.

    I'm in the same boat as you. I substituted the nutritional yeast for a couple of teaspoons of coconut aminos and it worked a treat. Still gives it a cheesy flavour, and the kids are too! I can make 4x the amount that is in a box of Annies gf mac n cheese!!Bake for 10 minutes (don't be surprised if your smoke detector goes off), this recipe was magic. It melted and was creamy and delicious.

    4 cups of water is just enough to cook 1 pound (16 ounces) of pasta. No draining is necessary; the water will be absorbed by the pasta. Great recipe.Didn't make it gluten free and used some Daiya cheddar instead of all parm also less garlic since I had to “roast” it chopped up but overall fantastic recipe I made it alongside your jackfruit BBQ sandwiches and it was amazing I made another macaroni along side it, for a hearty and easy mealAnyways, that is exactly what you want. Now you know what to do what that kind of mac ‘n cheese in the future.
