When spring rolls around, 3 years agoI see you said that creme fraiche could be substituted but I was wondering if you'd recommend making your own creme fraiche with buttermilk and heavy cream? Do you think it would still be as good or should I just go with the sour cream substitution? amazing!This cake was too light in texture and the cinamon was overpowering. I used 1 cup of nuts and could have added even more as that flavor was barely detectable. 3/4 cup of suggar was more than sufficient. I am glad I took the tip and checked for doneness at 45 min.I loved this cake. Both my husband and I are now diabetic, no fudging including a generous coating of baking spray on the bundt pan . After the 10 min of cooling prior to frosting the cake I went to turn it over and the cake basically fell apart. I don't know if it wasn't cool enough or what. Should this have been baking spray with flour by chance? Yes it was good but I'm more upset about it falling apart. It's a lot of work and time to make this and to have that happen is just totally frustrating.Now, it might be pushing it here.There are a couple of ways to enjoy this cream cheese frosting. The first method is to just spread the thick butter and cream cheese frosting over the top of the cooled cake in whatever method you desire. When you frost your Carrot Cake this way, Don't be alarmed if your cake takes an extra 5 minutes or even 10…every oven is different and your carrots may have more moisture from one day to the next…you really can't know what might make it take a little extra time sometimes.
