Aztec food was either boiled, they go flat and become quite hard a little past crisp…I live at sea level so I'm wondering is 1 tsp of soda is enough…I'm making them for a large party so I want them to be crunchy on the outside and moist on the inside like in your wonderful photo. I am thinking about decreasing the butter by 3 tbls and increasing the baking soda to 2 or maybe 3 tsp. Do you think adding an egg will help?
